Six months ago, if you had told me that I would be making and enjoying cauliflower pizza crusts, I would have denied it vehemently. I like cauliflower, but not in my wildest dreams would I have thought of using it for a crust. I was more inclined to steam it and serve it with a cheese sauce, just like my Nan used to do.
Since I have been casually following a ketogenic, or low carb diet, I’ve discovered a world of cauliflower possibilities. What follows has proven to be one of my favorites. If you have been nervous or not even considering it within your realm of culinary possibilities, I urge you to step away from the norm and give it a shot. I think you will be pleasantly surprised by this healthy, low carb option.
|1 Medium Head Cauliflower
1/2 cup of grated Italian Cheese Blend (low moisture Mozzarella, Asiago, Provolone and Romano)
1 Egg, beaten
1/4 cup Water
1 tsp. Italian Seasoning
1 tsp. Garlic, finely chopped
Salt and Pepper, to taste
1/4 Coconut flour, optional
Place cauliflower pieces in a blender or food processor and blitz until it forms small granules like rice. Put the cauliflower and water in a microwaveable bowl and cook on high for approximately 5 minutes or until cooked but no too mushy. Allow enough time to cool to be handled. Place the cauliflower in the centre of a cheesecloth or clean dish towel. Twist the cloth and squeeze all the liquid from the cauliflower. This step is very important or the pizza crust will not be crispy.
In a medium size bowl, combine the remaining ingredients with the cauliflower until it forms a dough-like ball. You can add some Coconut flour at this point if you feel the dough is too moist.
Place the parchment paper on a baking sheet and press the dough, no less than a 1/4 inch thick, into a ‘pizza’ shape. Add your favorite toppings. Bake in a preheated 450F degrees oven for 15 minutes or until crust is crispy and golden.
